Saying that white chocolate is your favorite chocolate is like saying water is your favorite bourbon.
The source of chocolate is cocoa beans. Cocoa butter is the smooth fat that melts in your mouth. Cocoa solids provide that chocolate goodness (that can sift into bitterness as the quantity increases).
Chocolate is made from the following ingredients: Chocolate Liquor (made from cocoa beans), Cocoa Butter (also from the cocoa bean), Sugar, Lecithin (an emulsifier), and Vanilla (Milk would be added for milk chocolate).
For white chocolate, instead of cocoa solids, you use milk solids, along with cocoa butter and sugar. It’s way too sweet and it’s completely lacking that “chocolate” taste.
If you like milk chocolate, I’ll merely chalk it up to your timid taste buds. But if you prefer white chocolate, you’re nuts.
